Recipe for "healthy pancakes"
This is a recipe I've been experimenting with for the past couple of years for a pancake alternative, with less sugar, more fiber, and more nutrients. Enjoy!Ingredients:
- 1 ripe banana
- 1 egg (or egg whites)
- Cinnamon
- Unsweetened vanilla almond milk
- Raw oats
- Vega vanilla protein powder (optional)
- Chopped strawberries (optional)
- Chia seeds (optional)
For extra sweetness, top with:
- Raw, organic honey (keep it local - great for allergies🐝)
- Unsweetened organic applesauce
1. Mash banana in a bowl
2. Add egg, scramble together with banana
3. Add raw oats (I usually eye-ball it, but approximately 1/4 cup)
4. Add chia seas (1 tablespoon)
5. Add 3 tablespoons almond milk, and let these ingredients sit for 30 minutes so the oats and seeds soften
6. After letting soak, add cinnamon (to taste) and vanilla protein powder (1/2 scoop)
7. Oil pan using butter or non-stick spray as you would for normal pancakes, add strawberries after pouring
This recipe makes 1 large pancake. Recommended to cook in small circular pan, covered so it cooks thick, which makes it easier to flip (more prone to breaking apart than regular pancakes - but tastes great messy too!)
